I wonder if the iPod Touch is partitioned differently than the iPhone? There are quite a lot of bugs in the jailbreaked version, that make live more difficult. About bluetooth, well the iPhone can handle on headset-profiles so far, so currently there wouln't be a way to initiate any kind of data connection with the phone, so don't worry, that you aint got no bluetooth.
